Writer's Repast: Rhubarb 'n Lemon Cake + Campaign News

I can't stick to a recipe. I've tried. It's not just because when the urge to bake overcomes me I may find the pantry short of essentials like eggs, sugar or milk...though that's sometimes the reason! But I think I am, at heart, a tweaker.

This is a recipe for the cake I made when my mother brought me rhubarb from her garden last week. We enjoyed slices of it warmed, with whipped cream.


Rhubarb 'n Lemon Cake

Line small loaf tin with baking paper. Preheat oven to 190C.

INGREDIENTS
70g butter
3/4 cup sugar
2 eggs
1 1/2 cups SR flour, sifted
1/2 cup milk
zest of 1 lemon
1 cup chopped rhubarb

Melt butter, mix in sugar and lemon zest, then beat in eggs one at a time until well combined. Mix in flour alternately with milk. Stir rhubarb through mixture. Pour into lined loaf tin.

Bake at 190C for 50 minutes. Cool on rack.

You could substitute other fruit for rhubarb if desired, but I loved the tart flavour of the rhubarb and lemon zest combined with the sweetness of the cake. Enjoy!

You know... I don't bake much, but MAN I love the sour sweet combo of lemon or rhubarb in a sweet, so this sounds really appealing. I like sweet (honestly, I like sweet like an American, which most of the world finds TOO sweet). I like salty. I like savory... the only think I'm picky about is not mixing the sweet and savory (not a big fan of sweet meat coatings--I like spicy barbeque, not sweet, and I NEVER put pineapple on a pizza)

I'm more of a savoury person myself - I love to cook. I do like baking, too, though, and my dad just LOVES lemon meringue pie, so I have a sneaking suspicion he'd like your rhubarb and lemon cake! I'll have to try it on him...

I love that you call yourself a tweaker. What a very appropriate thing for an author to be in 'real life.'

I always drag myself to bake or cook but when I get around to doing it, I am immersed in the experience and feel very happy.

I should do it more often ...

People are always telling me I'm a baker and I hate baking. I hate it that my kids beg me to play with them the second I get my hands floury and I too change the recipe always!!! I can make one decent chocolate cake recipe but compare that to my mum who bakes everything from cheesecake to quiche to black forest gateau I am so not in her league and no amount of compliments will drag my behind into the kitchen for anything other than raiding the snack cupboard or cooking a quick dinner :)

Baking!!! I love baking. And sweets. And cake... especially cake.

I'm usually missing the "key" ingredient, whether that's a fruit or chocolate or coconut... prevents me from just randomly making stuff everyday, which is probably a good thing. :D

Sounds delectable! I love to bake, but not when it's hot out. It used to be I would be out of eggs (and I believe I found that one could substitute 1/3 of a banana for an egg). I have eggs around more often now, though.

Hmm rhubarb and I don't go well. I love baking cookies, fast and easy. And chocolate is a must. I don't know what can replace it though.
